Aligal™ 13 , the gas mixture of 70% Nitrogen and 30% CO2 solution of Air Liquide used for food packaging

ALIGAL™ 13 is a gas mixture composed of 70% Nitrogen E941 and 30% E290 CO2 gas, compliant with food regulations and with the following characteristics.

70% Nitrogen - N2 - E941 gas

  • Nitrogen is an inert and Odorless gas

  • It’s little soluble in water and fats

  • No direct bacteriological and fungistatic effects

  • N2 prevents the oxidation phenomenon of pigments, aromas and / or fats on food

  • It limits the development of aerobic bacteria

  • It protects the products against crushing

  • Nitrogen has no direct bacteriological and fungistatic effects

30% Carbon dioxide - CO2 - E290 gas

  • CO2 is bacteriostatic and fungistatic from a certain level, very soluble in water and fats

  • CO2 slows down the growth and multiplication rate of the aerobic bacteria and of the fungi

  • It provides a pseudo vacuum effect to tension the foil after packaging.

Which foods can be packaged using a 70% N2 and 30% CO2 gas mixture?

A gas mixture composed of 70% N2 and 30% CO2 brings a longer shelf life on semi-wet food products in modified gas packaging (MAP).

For example: fresh and sliced fruits, sliced deli, prepared salads, pizza, ravioli, cooked noodles, rice pudding, hard cheese grated, mozzarella, raclette, smoked fish, semi dried fruits (dates, grapes, figs...), semi dry sausages, paté, processed meat, veggie burger, lin- and sunflower seeds, milk based sports drinks, ...

What are the benefits of a 70% Nitrogen and 30% CO2 gas mixture on dry-fatty food products?

  • Extension of the shelf life of the semi-wet products by 2 to 5 times with 70% Nitrogen and 20% CO2 compared to the normal atmosphere packaging. It gives producers the opportunity to step into new markets, both national and international, thanks to this longer shelf life.

  • The 70% Nitrogen and 30% CO2 gas mixture preserves the color, shape, texture and keeps your dry food products looking very attractive.

  • It protects against the risks of crushing the product and limits the risks of contact with the packaging caused by vacuuming.

  • Have the warranty to buy a N2 and CO2 gas mixture compliant with the latest food regulations

  • A Nitrogen and CO2 gas solution limits the use of additives and preservatives, and makes it possible to offer naturally fresh products in order to meet the wishes of the consumer.

In which volume can I buy the 70% Nitrogen and 30% CO2 gas mixture for foods ?

Why choose ALIGAL™ 13 70% N2 and 30% CO2 gas to package food in the MAP process?

Discover our free eBook to learn about the use of 70% N2 and 30% CO2 gas in the modified atmosphere packaging (MAP) process.

Food manufacturers have known and feared one of their biggest “enemies” for years: Air contains oxygen and promotes the development of bacteria and microbes and causes various damage to the foods: change of color, texture, taste, and has an impact on the shelf life.

To avoid these effects, Air Liquide offers a solution: the packaging in a protective atmosphere (also called "gas packaging" or MAP).

The solution is to replace the air in the packaging with an alternative gas composition, which can extend the organoleptic properties, nutritional value and shelf life of the product. A gas mixture of 70% nitrogen (N2) and 30% carbon dioxide (CO2) is therefore necessary in the gas composition for a longer shelf life of semi-wet food products in modified gas packaging (MAP).
